Founded in 1919 as Birds Confectioners by brothers Frank, Thomas and Reginald Bird, the bakery business has survived booms, busts and even war-time rationing. Rebranded as Birds Bakery in 2015, the business has grown from a single shop in Derby to a chain of 62, now employing over 750 people. 

Selling everything from cream doughnuts and crusty cobs to chocolate cake and chia loaves, the caramel doughnut is just one of the jewels in the Birds Bakery crown – with around 11,500 sold across the chain of stores every week.

Plans for expansion

“Birds Bakery is a great family business and we celebrated our centenary in 2019,” said Mike Holling, sales and marketing director, Birds Bakery. “We have a great strategy planned within the business and our aim is to have 80 shops within the next five years. 

“At the moment, we’re at 62 shops. The growth area in the whole of the baking industry is the food-to-go sector,” he explained. Birds used to have dedicated shops for its takeaway products, but its ready-to-bake products, hot sausage cobs and filled rolls and sandwiches are now so popular that they’re offered in any shop with the space to have an oven.

“We use Elavon Connect and we find that to be an excellent reporting tool,” Mike continues. “It gives us confidence to ensure all our transactions are secure. It gives us a single view of all our sites. We have next-day payment too, which is fantastic for cashflow.

“It's very important to have a dedicated team and, especially with Elavon, we have that available to us. So, if we require support or any guidance, they're there to help us immediately.”

Contactless over cash

Over the past few years, more and more Birds customers are opting to pay using contactless methods rather than cash. As alternative payments become increasingly popular, this traditional business is right up to date when it comes to payments technology. 

“It’s so important that Elavon were able to help us [take new ways to pay], improving the reliability of card payments within the business,” agrees Mike. 

As Birds continues to open new stores throughout the East Midlands, he stresses the important role that Elavon plays in the expansion. “It’s very important that we bring Elavon in, to help us with the installations and the interfacing with our electronic point-of-sale system. 

“We definitely have confidence that as our business grows, Elavon will actually help us grow. And that's very important – to have a partner you can rely on and who’ll deliver,” Mike concludes.
